CITRUS COCKTAIL

Ingredients:

  • 1 Grapefruit or 1/2 cup of Grapefruit Juice
  • 1 Naval Orange or 1 cup of Orange Juice
  • 1 teaspoon vanilla sugar
  • Mint – for garnish

Directions:

1. Add 2 parts orange juice to 1 part grapefruit juice and 1 teaspoon of vanilla sugar.

2. Blend well, add to a glass with crushed ice and enjoy. Garnish with mint and a grapefruit wheel.

* Other great combinations are Lemonade & Strawberries or Orange & Pomegranate juice.

 

GRAPEFRUIT SALAD

Ingredients:

  • 1 Grapefruit – cut in half and half way hollowed out
  • 1 teaspoon vanilla sugar
  • 5 Raspberries
  • 1 Kiwi – sliced 1/4 inch thick
  • Mint for garnish

Directions:

1. Cut a melon in half and take out half of the flesh and seeds.

2. Sprinkle grapefruit with vanilla sugar and let stand for 1-2 minutes.

3. Place raspberries and kiwi in the center of the grapefruit. Garnish with mint.

* Other filling suggestions include the following:

strawberries + kiwis / grapes + oranges / mangos + pineapples / figs + cherries

 

EGG IN A HOLE

Ingredients:

  • 1 loaf good quality white or wheat bread – cut into 1 inch thick slices
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 egg – cracked into a small bowl
  • Sea salt and fresh ground pepper
  • 1 tablespoon fresh chives – finely minced

Directions:

1. Using a 3 inch cookie cutter make a hole in the center of the bread.

2. Add the butter and olive oil to a pan on med-high heat. Once the butter melts place the bread and the circular piece in the pan until the bread turns a golden brown on the bottom (2-3 minutes).

3. Flip it over and immediately slide the egg in the hole and cook until the yolk sets and is warm.

4. Remove from the pan onto a plate and season with sea salt, pepper and chives.
