Ingredients
- 2 slices Whole grain bread (or any hearty bread of choice) – sliced 1 inch thick
- 2 tbsps. EVOO
- Sea Salt and Fresh cracked Pepper- to taste
- 2 Avocados – For each, one half mashed and one half sliced evenly
- 2 large Eggs – cooked sunny side up
- 1/4 cup Arugula
- 1 tomato – sliced evenly
- 1 tsp. Everything Bagel seasoning
Directions
- Place bread slices in the toaster (or oven broiler) and toast for about 2-3 minutes, or to your liking.
- Meanwhile, start the eggs. In a saute pan over medium heat, add EVOO. Once warm, crack the eggs gently into the pan. Season with salt/pepper.
- Allow the eggs to cook for about 3-4 minutes. Do not flip. You can always (using a spoon) move some of the hot oil over the egg to warm the yolk through. You want the egg whites to be cooked through, but the yolk warm and still runny.
- Once the bread is toasted, place and mash one half of the avocado onto each slice. Top with some arugula leaves and season with salt/pepper.
- Then, add tomato slices onto one edge of the bread slice, the other half of avocado (sliced) in the middle and then the fried egg.
- Sprinkle all over with some extra EVOO. Season with Salt/Pepper and the Bagel seasoning. Serve immediately. Enjoy!
