Rags to riches with food!!! Try not to be wasteful with food and definitely donโ€™t throw those orange or any citrus peels away..instead turn them into delicious ๐Ÿ˜‹ bites to enjoy! The following can be done with lemons ๐Ÿ‹, limes or grapefruits.

Pictured are Candied Orange ๐ŸŠ Peels. Pic 1 is how best to peel them and make sure there is little or no white pith left on the backside of the peel. Pics 2, 3 and 4 show the peels boiling (new water every time) on three separate occasions. The purpose is to reduce or eliminate the bitterness from the peel. Pic 5 just shows how best to pull them out from the boiling water. Pic 6 demonstrates how you want to cook the #orange peels for 10-15 minutes in a simple syrup made of water + sugar. Donโ€™t throw the orange scented syrup away!! Itโ€™s great for cocktails, crepes and as a simple sweetener!
Once the peels are cooked, remove them and place on a parchment covered sheet pan to cool off. Once cool lay them on a bed of sugar which is shown in pic 7. Make sure you cover them lightly with sugar and just allow them to crystallize. After a couple of hours you see the final product (shown in pic 8) - an exterior that is crispy/sweet and an interior that is soft/slightly chewy with an intense orange ๐ŸŠ flavor!
Take them to another level by dipping one half of them into chocolate ganache! Make a ton and give out to friends/family for the holidays! Or just make it for yourself and enjoy with a glass of scotch after dinner...my fave!! ๐Ÿ‘๐Ÿฝ #oranges #candiedfruit #orangepeel #hardatwork #austincatering #austinchef #residentialcatering #austin #chef #minimalwaste #simplethings #yummy #loveoranges #fruitdessert #frenchtechnique #slowfood #done
