Heirloom Tomato, Feta & Thyme Salad

Ingredients

  • 2 large Heirloom Tomato’s – sliced 1/2 inch thick
  • 1 bunch fresh Thyme – leaves only
  • 1 block Feta cheese – crumbled into small pieces
  • 1/2 cup Chef Leahs go to Vinaigrette
  • Sea salt and fresh cracked pepper

Directions

  1. Clean and prepare the tomato’s, thyme and feta.
  2. Prepare Chef Leah’s Go to Vinaigrette and set aside.
  3. To assemble, place 3 slices of tomato per plate (one scaled onto another).
  4. Dress with the vinaigrette and season with sea salt and fresh cracked pepper.
  5. Garnish with the Feta cheese and Thyme leaves. Enjoy!
