Watermelon + Kiwi Popsicles

Ingredients

  • 2-3 cups seedless Watermelon – cut into rough sized cubes
  • 2 tbsps. Lime juice
  • 3 Kiwi – peeled and cut into small chunks
  • 1-2 tbsps. Honey or Vanilla sugar – optional dependent upon how sweet the kiwis are

Directions

  1. Put the watermelon cubes and 1 tbsp. lime juice in a blender and blend on high until smooth.
  2. Pour watermelon mixture into popsicle molds (fill up about 80%).
  3. Place plastic handles or sticks into the molds. Freeze until watermelon is firm (roughly 2-3 hours).
  4. Meanwhile, place the kiwi chunks, 1 tbsp. lime juice and your chioce of sweetener in the blender. Blend on high 20-30 seconds or until smooth.
  5. Pour the kiwi mixture into the popsicle molds and freeze for at least 4 hours (best overnight). Enjoy!
