Ingredients
- 1 seedless Watermelon – cut into thick wedges
- 2-3 tbsps. crumbled Feta cheese (can also use goat cheese)
- 1-2 tbps. aged Balsamic Vinegar (purchase from Con Olio in Austin, Texas)
- 5-6 fresh Mint leaves
Directions
- Prep the Watermelon and Feta. Set aside.
- To serve place 2-3 Watermelon slices stacked on top of each other.
- Garnish with the Balsamic vinegar, Feta cheese and fresh Mint. Serve immediately and enjoy!
