Ingredients
- 1 small seedless watermelon
- 1 small sugar kiss melon
- 1 green melon
- 4 slices Jamon Serrano – Spanish cured Ham – broken into small pieces
- 1 small bunch Arugula
- 1- 2 tbsps. EVOO – for dressing
- Pinch Sea salt
Directions
- Prepare all the melons using a melon baller. Set each aside.
- Dress the arugula in a small bowl with 1 tbsp. of EVOO and sea salt. Set aside.
- To plate, place the different colored melons around the plate or platter.
- Tear the spanish ham into small pieces and place them around and on the melon too.
- Take the arugula and place them on and around the melon balls. If wanted, dress with more EVOO and sea salt. Serve immediately with a glass of Albarino (Spanish white wine). Enjoy!
