Eggs & Lox Everything Bagel

Ingredients

  • 4 Everything Bagels from Small’s Pizza – best bagel in town located at Springdale General!
  • 1 Package of Lox (Smoked Salmon) – separate into thin slices
  • 6 Eggs – scrambled and cooked until soft and curdled
  • 1 Large ripe Avocado – sliced into thin wedges
  • 1 red Onion – sliced thin and shocked in ice water for 30 minutes
  • One 16 oz container of Cream Cheese
  • 3-4 tbsps. Capers
  • 1 Package of fresh Dill
  • EVOO
  • Sea Salt

Directions

  1. Slice your bagles in half and toast them until golden in color. Cook your scrambled eggs. Set aside.
  2. Shmear the cream cheese on top of the bagels. Place some of the eggs and a couple of slices of Lox on top of the bagel.
  3. Garnish with avocado slices, red onion, capers and dill.
  4. Dress the whole thing with EVOO and Sea Salt. Serve the bagels with Chef Crusco’s Hot Chocolate Cappuccino. Enjoy!
