Ingredients
- 4 Everything Bagels from Small’s Pizza – best bagel in town located at Springdale General!
- 1 Package of Lox (Smoked Salmon) – separate into thin slices
- 6 Eggs – scrambled and cooked until soft and curdled
- 1 Large ripe Avocado – sliced into thin wedges
- 1 red Onion – sliced thin and shocked in ice water for 30 minutes
- One 16 oz container of Cream Cheese
- 3-4 tbsps. Capers
- 1 Package of fresh Dill
- EVOO
- Sea Salt
Directions
- Slice your bagles in half and toast them until golden in color. Cook your scrambled eggs. Set aside.
- Shmear the cream cheese on top of the bagels. Place some of the eggs and a couple of slices of Lox on top of the bagel.
- Garnish with avocado slices, red onion, capers and dill.
- Dress the whole thing with EVOO and Sea Salt. Serve the bagels with Chef Crusco’s Hot Chocolate Cappuccino. Enjoy!
