Green Pea + Mint Hummus

Ingredients

  • 1 can Garbanzo Beans – rinsed and drained
  • 1 cup frozen Peas – thawed
  • 2 Garlic cloves – peeled and cut into small pieces
  • 5-6 tbsps. Tahini
  • 4-5 tbsps. water – adjust as needed
  • 2 tbsps. EVOO
  • 2-3 tbsps. Lemon juice
  • 10-20 Mint leaves – or to taste
  • 4-5 stems Cilantro
  • Sea Salt & fresh ground Pepper – to taste
  • 2 Radishes – sliced thin for garnish
  • Optional – Aleppo pepper flakes for garnish

Directions

  1. Combine beans, peas, garlic, tahini, water, evoo, lemon juice, mint and cilantro in a food processor and purée for 2-3 minutes or until smooth (make sure to scrape down the sides of the bowl as needed).
  2. Taste and season with salt, pepper, lemon juice and/or more herbs if needed.
  3. Prepare the radishes and set aside. Place the hummus into a serving bowl. Garnish with peas, radishes, herbs and more EVOO. Sprinkly with sea salt and serve with Pita Chips. Enjoy!
