Summer Watermelon Salad

Ingredients

  • 1 seedless Watermelon – cut into thick wedges
  • 2-3 tbsps. crumbled Feta cheese (can also use goat cheese)
  • 1-2 tbps. aged Balsamic Vinegar (purchase from Con Olio in Austin, Texas)
  • 5-6 fresh Mint leaves

Directions

  1. Prep the Watermelon and Feta. Set aside.
  2. To serve place 2-3 Watermelon slices stacked on top of each other.
  3. Garnish with the Balsamic vinegar, Feta cheese and fresh Mint. Serve immediately and enjoy!
